Warm Brussels Sprouts and Sage Salad

Ingredients

The salad

  • 2 Tbsp olive oil
  • 4 cups shaved brussels sprouts
  • 1 unit red onion, thinly sliced
  • ½ cup celery, thinly sliced
  • 1 unit orange, peeled and sliced
  • 3 Tbsp toasted almond slices

The dressing

  • ¼ cup apple cider vinegar
  • 1 Tbsp honey
  • tsp Dijon mustard
  • 1 Tbsp olive oil
  • 1 Tbsp fresh sage, roughly chopped
  • Pinch unit salt

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add brussels sprouts, onion, and celery; cook covered for 5 to 6 minutes until tender, stirring occasionally.
  3. Uncover and cook for an additional 2 to 3 minutes until the brussels sprouts start to brown.
  4. In a small bowl, whisk together the apple cider vinegar, honey, Dijon mustard, olive oil, sage, and salt.
  5. Pour the dressing over the brussels sprouts and cook for an additional minute until well mixed and heated through.
  6. Remove from heat and stir in the orange slices.
  7. Toss with toasted almond slices, serve warm, and enjoy!
