Shaved Brussels Sprout Salad

Ingredients

The salad

  • 1 lb Brussels sprouts
  • 1 cup hazelnuts, roasted
  • ¾ cup chopped dates
  • ¼ cup finely diced red onion

The dressing

  • ¼ cup extra virgin olive oil
  • ¼ cup apple cider vinegar
  • cup real maple syrup or honey
  • ¼ teaspoon salt
  • teaspoon cayenne pepper
  • to taste black pepper
  • zest of 1 orange orange zest

Instructions

  1. Rinse and trim the Brussels sprouts, then finely slice them.
  2. Toast the hazelnuts in a 325°F oven for 10-15 minutes.
  3. Slice the dates and add them to a large bowl with the hazelnuts and red onion.
  4. Whisk together the olive oil, apple cider vinegar, maple syrup, salt, cayenne, and black pepper.
  5. Toss the salad with the dressing and mix in the orange zest, saving some for garnish.
