Ingredients

Candied Walnuts

  • 1 cup raw walnuts
  • 1 tablespoon maple syrup

Salad

  • ½ lb. shaved Brussels sprouts
  • 1 teaspoon olive oil
  • pinch salt
  • ½ cup dried apricots, minced
  • ½ cup dried cranberries
  • 1 medium apple, chopped
  • ¼ cup sunflower seeds
  • 3 tablespoons minced chives
  • 3 tablespoons homemade balsamic vinaigrette dressing
  • 2 ounces crumbled goat cheese

Instructions

  1. Preheat the oven to 400ºF.
  2. Spread walnuts on a baking sheet and drizzle with maple syrup and salt, ensuring they are well-coated.
  3. Bake for 10 minutes, stirring halfway through, then let cool.
  4. In a large mixing bowl, combine shaved Brussels sprouts with olive oil and salt, massaging for 2-3 minutes.
  5. Add the cooled walnuts and remaining salad ingredients to the bowl and mix well.
  6. Store in the refrigerator for at least 30 minutes before serving.
