Instructions
- Trim the bottoms and outer leaves of the Brussels sprouts, then shave or slice them thinly.
- Shave or shred the red cabbage in the same manner.
- In a large mixing bowl, combine the shaved Brussels sprouts, leafy greens, shredded red cabbage, diced apple, chopped dates, pumpkin seeds, and crumbled feta.
- In a glass measuring cup, whisk together all the vinaigrette ingredients until well combined.
- Pour the vinaigrette over the salad and toss gently to coat the ingredients.
- Allow the salad to sit for a couple of hours to let the flavors meld.
