Ingredients

The salad

  • 4 cups Brussels sprouts
  • 2 cups mixed leafy greens
  • cups finely shredded red cabbage
  • 1 each Golden Delicious apple, diced
  • cup chopped pitted dates
  • ¼ cup pumpkin seeds
  • ¼ cup Feta cheese crumbles

The vinaigrette

  • 1 clove garlic, minced
  • cup extra-virgin olive oil
  • 3 tbsp balsamic vinegar
  • 2 tbsp lemon juice
  • 2 tbsp pure maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh thyme, chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper

Instructions

  1. Trim the bottoms and outer leaves of the Brussels sprouts, then shave or slice them thinly.
  2. Shave or shred the red cabbage in the same manner.
  3. In a large mixing bowl, combine the shaved Brussels sprouts, leafy greens, shredded red cabbage, diced apple, chopped dates, pumpkin seeds, and crumbled feta.
  4. In a glass measuring cup, whisk together all the vinaigrette ingredients until well combined.
  5. Pour the vinaigrette over the salad and toss gently to coat the ingredients.
  6. Allow the salad to sit for a couple of hours to let the flavors meld.
