Ingredients

The salad

  • 5 cups Shaved Brussels Sprouts
  • cup Dried Cranberries or Chopped Dates
  • cup Pumpkin Seeds
  • cup Chopped Walnuts
  • ½ cup Shaved Parmesan Cheese or dairy-free parmesan

The dressing

  • ¼ cup Olive Oil
  • 3 tablespoons Lemon Juice
  • 2 teaspoons Red Wine Vinegar
  • 1 tablespoon Maple Syrup
  • 2 teaspoons Dijon Mustard
  • to taste Sea Salt and Black Pepper

Instructions

  1. Whisk together all dressing ingredients in a small bowl and set aside.
  2. Combine all salad ingredients in a large bowl and toss to mix.
  3. Pour the dressing over the salad and mix well.
  4. Let the salad sit for 15-20 minutes to allow flavors to develop.
