Ingredients

  • 4 cups shaved Brussels sprouts
  • ¼ cup extra-virgin olive oil
  • ¼ cup fresh lemon juice
  • ½ cup toasted pine nuts
  • cup dried cranberries
  • cup grated pecorino cheese (optional)
  • cup chopped chives
  • to taste sea salt
  • to taste freshly ground black pepper

Instructions

  1. Thinly slice the Brussels sprouts and place them in a medium bowl.
  2. Toss the sprouts with olive oil, lemon juice, pine nuts, cranberries, pecorino cheese, chives, salt, and pepper.
  3. Let the salad sit at room temperature for 15 minutes.
  4. Taste and adjust the seasonings, adding more olive oil if desired.
