Shaved Brussels Sprout Salad

Lemon Vinaigrette

fresh lemon juice

Instructions
- Heat a skillet over medium-high heat and add pecans, butter, and brown sugar.
- Cook for 4-5 minutes while stirring until the butter and sugar melt and coat the pecans.
- Transfer the pecans to foil or parchment paper to cool.
- In a small bowl, combine lemon juice, olive oil, maple syrup, mustard, minced garlic, salt, and pepper, whisking until mixed.
- In a large bowl, combine brussels sprouts, arugula, pomegranate seeds, sliced apple, shaved cheddar, and cooled pecans.
- Drizzle with the dressing and gently toss to combine. Serve immediately.
