Ingredients

The salad

  • 5 cups shaved brussels sprouts
  • ½ cup pecans
  • ½ cup dried cranberries
  • ½ cup crumbled goat cheese
  • ½ cup crumbled crispy bacon
  • 2 pieces hardboiled eggs, diced

The vinaigrette

  • ¼ cup hard apple cider
  • 1 tablespoon dijon mustard
  • 1 clove garlic, minced
  • 1 tablespoon maple syrup
  • ½ teaspoon dry basil
  • cup olive oil
  • to taste salt & pepper

Instructions

  1. Mix the hard apple cider, dijon mustard, minced garlic, maple syrup, dry basil, salt, and pepper in a small bowl.
  2. Slowly add olive oil to the mixture while stirring until well combined.
  3. In a large bowl, combine the shaved brussels sprouts, dried cranberries, diced hardboiled eggs, pecans, goat cheese, and bacon.
  4. Toss the salad and either mix in the dressing until just coated or serve the dressing on the side.
