Ingredients

Dressing

  • 1 teaspoon minced garlic
  • 1 teaspoon dried thyme
  • ½ teaspoon sea salt
  • ½ teaspoon fresh ground black pepper
  • ½ cup olive oil (extra virgin)

Salad

  • 2 pounds Brussels sprouts (shaved)
  • 1 cup Daiya Cutting Board Collection Cheddar Shreds
  • ½ cup pine nuts (toasted)
  • cup pomegranate arils

Instructions

  1. Make the dressing by blending lemon juice, apple cider vinegar, Dijon mustard, red onion, erythritol, garlic, thyme, salt, and pepper, then drizzle in the oil.
  2. Toss the shaved Brussels sprouts with the dressing and let sit at room temperature for an hour or refrigerate overnight.
  3. Stir in the Daiya shreds, pine nuts, and pomegranate before serving.
