Ingredients

The salad

  • 10 oz shaved Brussels sprouts
  • cup shaved or grated Parmesan
  • cup dried cherries
  • 1 medium apple, chopped
  • ¼ cup walnuts, chopped and toasted

The creamy walnut dressing

  • ¼ cup walnuts
  • 2 tbsp extra virgin olive oil
  • ¼ cup water
  • 1 large lemon, juiced
  • 2 tsp honey or maple syrup
  • 1 clove garlic
  • 1 tsp Dijon mustard
  • ½ tsp fine salt
  • ½ tsp black pepper

Instructions

  1. Soak walnuts for dressing in water.
  2. Toast walnuts for salad in a skillet over medium heat for about 5 minutes.
  3. Combine Brussels sprouts, cheese, dried cherries, apple, and toasted walnuts in a large mixing bowl.
  4. Blend soaked walnuts with olive oil, water, lemon juice, honey, garlic, salt, and pepper to make the dressing.
  5. Drizzle dressing over salad, toss to combine, and season to taste.
