Ingredients

Spiced Maple Walnuts

  • 1 cup walnut halves
  • 2 ½ tablespoons maple syrup
  • 1 teaspoon gluten free Tamari soy sauce
  • ½ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste sea salt and ground black pepper

Creamy Garlic Dressing

  • ½ cup raw sunflower seeds, soaked for at least 2 hours and drained
  • 1 clove garlic, peeled
  • 1 tablespoon nutritional yeast
  • 2 tablespoons lemon juice
  • 2 tablespoons orange juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 2 teaspoons maple syrup
  • ½ cup water

Shaved Brussels Sprout Salad

  • 1 lb Brussels sprouts, trimmed and shaved thin
  • 1 small red onion, shaved thin
  • 1 medium apple, cored and shaved thin
  • handful fresh parsley or dill, chopped (optional)

Instructions

  1. Prepare the spiced maple walnuts by heating a skillet and combining walnuts, maple syrup, Tamari, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook until caramelized and toasted, then cool and chop.
  2. Make the creamy garlic dressing by blending sunflower seeds, garlic, nutritional yeast, lemon juice, orange juice, olive oil, Dijon mustard, maple syrup, water, and seasoning until smooth.
  3. Assemble the salad by mixing shaved Brussels sprouts, red onion, and apple in a bowl. Season with salt and pepper, then add ¾ of the dressing and toss to combine.
  4. Transfer the salad to a serving platter if desired, then drizzle with remaining dressing, add extra pepper, chopped spiced walnuts, and herbs before serving.
