Shaved Brussels Sprout Salad

Brussels sprouts, trimmed and shaved thin

red onion, shaved thin

Instructions
- Prepare the spiced maple walnuts by heating a skillet and combining walnuts, maple syrup, Tamari, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook until caramelized and toasted, then cool and chop.
- Make the creamy garlic dressing by blending sunflower seeds, garlic, nutritional yeast, lemon juice, orange juice, olive oil, Dijon mustard, maple syrup, water, and seasoning until smooth.
- Assemble the salad by mixing shaved Brussels sprouts, red onion, and apple in a bowl. Season with salt and pepper, then add ¾ of the dressing and toss to combine.
- Transfer the salad to a serving platter if desired, then drizzle with remaining dressing, add extra pepper, chopped spiced walnuts, and herbs before serving.
