Ingredients

  • 2 tablespoons Maggi (Bouillon)
  • 1 large Onion (sliced)
  • 1 pound Groundnuts/Peanuts (Skinless)
  • ½ pound shrimp
  • ½ pound stockfish
  • ½-1 pound Stew beef (cut in chunks)
  • 4-5 cloves garlic
  • ¾ cup Crayfish (ground)
  • ¾-1 pound Washed bitterleaves (sub frozen spinach)
  • 2-3 cups oil

Instructions

  1. Season meat with salt, Maggi, and onions, then boil until tender.
  2. Boil stockfish with salt and water, then add it to the boiled meat.
  3. Reserve about 3 cups of stock from the meat and stockfish.
  4. Boil peanuts for about 10 minutes, then blend into a fine consistency.
  5. Add the blended peanuts to the mixture of beef and stockfish.
  6. Blend one onion and garlic into a paste and add to the peanut mixture.
  7. Add the crayfish and let it simmer for 10 minutes, stirring frequently.
  8. Season with salt and Maggi to taste.
  9. Add the bitter leaves or spinach to the pot and simmer for several more minutes.
  10. In a separate pan, heat oil and add shrimp, stirring until they turn pink.
  11. Add sliced onions to the shrimp and stir for a few more minutes.
  12. Incorporate the shrimp mixture into the pot of Ndole, stir, and serve hot.
