Ingredients

  • 12 pieces eggs
  • to taste salt
  • to taste pepper
  • 6 slices cooked and crumbled bacon
  • ½ cup onion, chopped
  • ½ cup green pepper, chopped
  • ½ cup red pepper, chopped
  • cup mushrooms, chopped
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ½ cup fresh spinach, finely chopped

Instructions

  1. Preheat the oven to 350°F.
  2. Whisk the eggs in a large bowl with salt and pepper.
  3. Spray a 12-capacity muffin tin with cooking oil.
  4. Pour the eggs into each muffin tin, filling them halfway.
  5. Add the bacon, onions, peppers, and mushrooms to the tins.
  6. Top with shredded cheese.
  7. Bake for 14-16 minutes until the eggs are set.
  8. Cool completely before serving.
