Mushroom, Spinach and Bacon Egg Muffins

Instructions
- 1. Heat a large skillet over medium heat and cook the bacon until crispy.
- 2. While the bacon cooks, prepare the shallot, mushrooms, and spinach.
- 3. Preheat the oven to 375°F.
- 4. In a large bowl, whisk the eggs and then mix in the cooked bacon, mushrooms, shallot, spinach, salt, and pepper.
- 5. Grease a muffin tin with avocado oil and pour the egg mixture into each section, filling them about 3/4 full.
- 6. Bake in the oven for 20 minutes and then serve.
