Ingredients

The muffins

  • 10 pieces eggs
  • 2 cups mushrooms, sliced
  • 2 cups spinach, finely chopped
  • 1 piece shallot, diced
  • ½ teaspoon salt
  • ½ teaspoon pepper

The cooking fat

  • 2 tablespoons avocado oil

The bacon

  • 8 pieces bacon, diced

Instructions

  1. 1. Heat a large skillet over medium heat and cook the bacon until crispy.
  2. 2. While the bacon cooks, prepare the shallot, mushrooms, and spinach.
  3. 3. Preheat the oven to 375°F.
  4. 4. In a large bowl, whisk the eggs and then mix in the cooked bacon, mushrooms, shallot, spinach, salt, and pepper.
  5. 5. Grease a muffin tin with avocado oil and pour the egg mixture into each section, filling them about 3/4 full.
  6. 6. Bake in the oven for 20 minutes and then serve.
