Ingredients

  • ½ cup creamy peanut butter
  • cup honey
  • 1 tsp vanilla extract
  • 1 cup old-fashioned oats
  • cup toasted shredded coconut
  • ½ cup ground golden flaxseed meal
  • 6 Tbsp chocolate chips

Instructions

  1. In a mixing bowl, combine peanut butter, honey, and vanilla extract.
  2. Add the oats, coconut, flaxseed meal, and chocolate chips, and mix until well combined.
  3. Chill the mixture in the refrigerator for about 30 minutes until it firms up.
  4. Roll the mixture into 1-inch balls.
  5. Store the energy balls in an airtight container in the refrigerator.
