Ingredients

The base

  • ¼ to ⅓ cup crushed honey roasted nuts
  • 2 cups gluten-free rolled oats
  • cup chocolate chips
  • cup dried cranberries
  • 1 teaspoon cinnamon

The binding ingredients

  • ½ cup natural no-stir nut butter or sunflower seed butter
  • 1 teaspoon vanilla extract
  • ⅓ to ½ cup honey or maple syrup
  • 2 tablespoons gluten-free flour or protein powder (optional)

Instructions

  1. Crush the honey roasted nuts and set aside.
  2. In a large bowl, mix the rolled oats, chocolate chips, dried cranberries, crushed nuts, and cinnamon.
  3. Add the nut butter and vanilla to the dry ingredients and stir to combine.
  4. Gradually mix in honey or maple syrup until the mixture is thick but not sticky.
  5. If the mixture is too sticky, add gluten-free flour or protein powder as needed.
  6. Chill the mixture in the refrigerator for about 20 minutes.
  7. Roll the chilled mixture into 1-1.5 inch balls and place them on a tray lined with parchment paper.
  8. Freeze the balls for 20-30 minutes until firm, then store in a bag.
