Instructions
- Crush the honey roasted nuts and set aside.
- In a large bowl, mix the rolled oats, chocolate chips, dried cranberries, crushed nuts, and cinnamon.
- Add the nut butter and vanilla to the dry ingredients and stir to combine.
- Gradually mix in honey or maple syrup until the mixture is thick but not sticky.
- If the mixture is too sticky, add gluten-free flour or protein powder as needed.
- Chill the mixture in the refrigerator for about 20 minutes.
- Roll the chilled mixture into 1-1.5 inch balls and place them on a tray lined with parchment paper.
- Freeze the balls for 20-30 minutes until firm, then store in a bag.
