Ingredients

Corned Beef Ingredients

  • 1 piece corned beef (4-5 pounds)
  • 2 Tbsp canola oil
  • 1 whole onion, peeled and quartered
  • 8 whole cloves
  • 4 cloves garlic, minced
  • 3 sprigs fresh thyme
  • 3 leaves bay leaves
  • 1 Tbsp whole black peppercorns
  • 3 pieces carrots, peeled and quartered (optional)

Blackberry-Dijon Glaze Ingredients

  • ½ cup blackberry preserves
  • 2 Tbsp dijon mustard
  • 2 Tbsp brown sugar, packed
  • 1 Tbsp soy sauce
  • ½ tsp freshly-ground black pepper

Instructions

  1. Trim excess fat from the corned beef.
  2. Heat oil in a Dutch oven over medium-high heat and brown the corned beef for 1-2 minutes on each side.
  3. Add onion, cloves, garlic, thyme, bay leaves, and peppercorns, then cover the beef with water.
  4. Bring to a boil, then reduce heat to low and simmer for 3-4 hours or cook in a 300°F oven for 4-5 hours until fork-tender.
  5. If using carrots, add them to the pot about an hour before the beef is done.
  6. Remove the beef and carrots, placing the beef on a foil-covered baking sheet.
  7. Brush the beef with glaze and broil for 5-7 minutes until caramelized.
  8. Let the beef rest for 10-15 minutes before carving and serve with desired sides.
  9. For the glaze, whisk together the glaze ingredients in a saucepan, boil until slightly reduced and thickened.
