Instructions
- Trim excess fat from the corned beef.
- Heat oil in a Dutch oven over medium-high heat and brown the corned beef for 1-2 minutes on each side.
- Add onion, cloves, garlic, thyme, bay leaves, and peppercorns, then cover the beef with water.
- Bring to a boil, then reduce heat to low and simmer for 3-4 hours or cook in a 300°F oven for 4-5 hours until fork-tender.
- If using carrots, add them to the pot about an hour before the beef is done.
- Remove the beef and carrots, placing the beef on a foil-covered baking sheet.
- Brush the beef with glaze and broil for 5-7 minutes until caramelized.
- Let the beef rest for 10-15 minutes before carving and serve with desired sides.
- For the glaze, whisk together the glaze ingredients in a saucepan, boil until slightly reduced and thickened.
