Instructions
- Rinse the corned beef and pat dry.
- Brown both sides of the beef in a large skillet, then transfer to a slow cooker.
- In a bowl, whisk together garlic, brown sugar, vinegar, mustard, salt, and pepper, then rub this mixture over the beef.
- Add bay leaf, thyme, and water to the slow cooker, ensuring the water comes about a quarter of the way up the beef.
- Cook the beef for 8-9 hours, turning occasionally.
- Melt butter in the skillet and cook onions and garlic until fragrant, then set aside.
- Toss the diced potatoes with olive oil, salt, and pepper, then cook in the skillet until tender.
- Add Italian seasoning to the potatoes and mix well.
- Return the garlic and onions to the skillet, then add the chopped corned beef and Worcestershire sauce.
- Cook until crispy and tender, then garnish with parsley and serve with eggs.
