Ingredients

Corned Beef

  • 3 lbs corned beef
  • 4 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons spicy brown mustard
  • 1 pinch salt
  • 1 teaspoon black pepper
  • 1 bay leaf
  • 2 sprigs thyme
  • 2 cups water

Corned Beef Hash

  • 4 tablespoons butter
  • 2 medium yellow onions, diced
  • 3 cloves garlic, minced
  • 5 large potatoes, diced
  • to taste olive oil
  • to taste salt and pepper
  • 1 tablespoon Italian seasoning
  • 1 teaspoon Worcestershire sauce
  • to garnish fresh parsley, chopped

Instructions

  1. Rinse the corned beef and pat dry.
  2. Brown both sides of the beef in a large skillet, then transfer to a slow cooker.
  3. In a bowl, whisk together garlic, brown sugar, vinegar, mustard, salt, and pepper, then rub this mixture over the beef.
  4. Add bay leaf, thyme, and water to the slow cooker, ensuring the water comes about a quarter of the way up the beef.
  5. Cook the beef for 8-9 hours, turning occasionally.
  6. Melt butter in the skillet and cook onions and garlic until fragrant, then set aside.
  7. Toss the diced potatoes with olive oil, salt, and pepper, then cook in the skillet until tender.
  8. Add Italian seasoning to the potatoes and mix well.
  9. Return the garlic and onions to the skillet, then add the chopped corned beef and Worcestershire sauce.
  10. Cook until crispy and tender, then garnish with parsley and serve with eggs.
