Corned Beef Hash

Ingredients

The hash

  • 3 cups small-diced potatoes
  • 2–3 Tbsp. butter
  • 1 medium white or yellow onion
  • 2 cloves garlic
  • 1 tsp. salt
  • ½ tsp. freshly-cracked black pepper
  • pinch cayenne
  • pinch dried thyme
  • 2–3 cups shredded or diced cooked corned beef

For garnish

  • chopped fresh parsley

Instructions

  1. Boil water in a medium pot and add the potatoes, cooking for 5 minutes until partially cooked, then drain.
  2. In a large skillet, heat butter over medium-high heat and sauté the onion for 3 minutes.
  3. Add the potatoes, garlic, salt, pepper, cayenne, and thyme to the skillet, and sauté for another 10-12 minutes, stirring occasionally.
  4. Once the potatoes are browned, add the corned beef and sauté for a few more minutes to warm it.
  5. Garnish with chopped parsley and serve immediately.
