Instructions
- 1. Cook lentils in water, bringing to a low boil, then simmer until desired doneness.
- 2. Drain lentils, season with salt, and set aside.
- 3. In a skillet, heat olive oil and sauté garlic, carrots, and optional tomatoes for 3 minutes.
- 4. Remove from heat, add tomato sauce, tomato paste, salt, chili flakes, oregano, basil, sweetener, and optional vegan parmesan, then stir.
- 5. Return to heat, simmer for 10-15 minutes, stirring occasionally.
- 6. Cook the gluten-free pasta according to package instructions.
- 7. Combine cooked lentils with the sauce, adjust seasonings, and serve over pasta.
