Ingredients

Lentils

  • ½ cup dry red lentils
  • 2 cups water
  • 1 pinch sea salt

Pasta Sauce

  • 1 Tbsp olive oil
  • 3 cloves garlic (minced)
  • ¼ cup carrots (very finely diced)
  • ¼ cup diced tomatoes (optional)
  • 1 15-ounce can tomato sauce
  • 2 Tbsp tomato paste
  • 1 pinch sea salt (plus more to taste)
  • ½ tsp red chili flakes (divided)
  • 1 Tbsp dried or fresh oregano
  • 1 Tbsp dried or fresh basil
  • 1-2 Tbsp sweetener of choice
  • 1 Tbsp vegan parmesan cheese (optional)

For Serving

  • 8 ounces gluten-free pasta

Instructions

  1. 1. Cook lentils in water, bringing to a low boil, then simmer until desired doneness.
  2. 2. Drain lentils, season with salt, and set aside.
  3. 3. In a skillet, heat olive oil and sauté garlic, carrots, and optional tomatoes for 3 minutes.
  4. 4. Remove from heat, add tomato sauce, tomato paste, salt, chili flakes, oregano, basil, sweetener, and optional vegan parmesan, then stir.
  5. 5. Return to heat, simmer for 10-15 minutes, stirring occasionally.
  6. 6. Cook the gluten-free pasta according to package instructions.
  7. 7. Combine cooked lentils with the sauce, adjust seasonings, and serve over pasta.
