Spicy Red Lentil Spread

Ingredients

  • 1 cup red lentils
  • ¼ cup cornmeal
  • 1 teaspoon olive oil
  • 1 medium yellow onion, small dice
  • ½ cup marinara sauce
  • 3 tablespoons sriracha
  • 1 tablespoon ground cumin
  • ½ teaspoon cayenne pepper
  • 2 stalks green onions, finely sliced
  • 4 stems parsley, leaves finely sliced
  • to taste sea salt
  • to taste ground black pepper

Instructions

  1. Cook the lentils in a saucepan with water until soft and liquid is absorbed, about 15 minutes.
  2. Mash the hot lentils with cornmeal until smooth, then mix in cumin and cayenne.
  3. Sauté onions in olive oil until soft, then add marinara sauce and sriracha, simmering briefly.
  4. Combine the onion mixture with the lentils, let cool, and then fold in herbs.
  5. Season with salt and pepper to taste and serve.
