Red Lentil Hummus

Instructions
- Boil water in a medium pot and add the lentils, then reduce heat and simmer covered until tender, about 15 minutes.
- Drain the lentils and let them cool for 10 to 15 minutes.
- Transfer the lentils to a blender and add tahini, lemon juice, coconut oil, garlic, ginger, and spices.
- Blend until creamy, adding water if the mixture is too thick.
- Taste and adjust seasonings as needed, then chill until ready to serve.
- Serve with naan or cut vegetables.
