Red Lentil Hummus

Ingredients

The base

  • 1 cup dried red lentils
  • ¼ cup smooth tahini
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons melted coconut oil
  • 2 cloves garlic
  • ½ teaspoon grated fresh ginger

The spices

  • ½ teaspoon cumin
  • ¼ teaspoon coriander
  • ¼ teaspoon turmeric
  • ¼ teaspoon cardamom
  • ¼ teaspoon onion powder
  • ¼ teaspoon cayenne
  • ½ teaspoon sea salt
  • to taste freshly ground black pepper

For serving

  • as needed Naan and/or cut vegetables

Instructions

  1. Boil water in a medium pot and add the lentils, then reduce heat and simmer covered until tender, about 15 minutes.
  2. Drain the lentils and let them cool for 10 to 15 minutes.
  3. Transfer the lentils to a blender and add tahini, lemon juice, coconut oil, garlic, ginger, and spices.
  4. Blend until creamy, adding water if the mixture is too thick.
  5. Taste and adjust seasonings as needed, then chill until ready to serve.
  6. Serve with naan or cut vegetables.
