Mediterranean Lentil Dip

Ingredients

The lentils

  • 1 cup dry green lentils
  • 2 cups water
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • 1 tsp maple syrup
  • 1 tsp lemon juice
  • 2 tsp olive oil

The shallot and garlic

  • 1 Tbsp olive oil
  • 2 medium shallots
  • 2 large cloves garlic

The sauce

  • cup hummus
  • 3 Tbsp tahini
  • 3 Tbsp fresh dill
  • ½ tsp maple syrup
  • 2 Tbsp lemon juice
  • to taste water for thinning

For serving / garnish

  • to taste fresh chopped parsley
  • to taste pita chips or crackers
  • to taste vegetables
  • to taste chopped kalamata olives
  • to taste baked sweet potato

Instructions

  1. Cook lentils in water until tender, about 20-30 minutes.
  2. Strain lentils and season with salt, pepper, maple syrup, lemon juice, and olive oil.
  3. Sauté shallots in olive oil until softened, then add garlic until golden.
  4. Mix sauce ingredients in a bowl and thin with hot water as needed.
  5. Combine lentils with sautéed shallots and sauce, stir well.
  6. Serve garnished with parsley, olives, and alongside pita chips or vegetables.
