Instructions
- Cook lentils in water until tender, about 20-30 minutes.
- Strain lentils and season with salt, pepper, maple syrup, lemon juice, and olive oil.
- Sauté shallots in olive oil until softened, then add garlic until golden.
- Mix sauce ingredients in a bowl and thin with hot water as needed.
- Combine lentils with sautéed shallots and sauce, stir well.
- Serve garnished with parsley, olives, and alongside pita chips or vegetables.
