Ingredients

The base

  • 1 cup dried green lentils
  • 3 cups vegetable broth

The flavorings

  • 2 cloves garlic
  • ¼ cup olive oil
  • ¼ cup tahini
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin (optional)
  • to taste salt

Instructions

  1. 1. In a saucepan, combine lentils and broth, bring to a boil, then simmer uncovered until lentils are tender, about 30 minutes.
  2. 2. Drain the lentils and let them cool completely for about 20 minutes.
  3. 3. In a food processor, blend the cooled lentils with garlic, olive oil, tahini, lemon juice, cumin (if using), and salt until smooth.
  4. 4. Transfer the hummus to a bowl, drizzle with olive oil, and serve with pita, crackers, or veggies.
