Ingredients

  • 1 clove fresh garlic
  • cups steamed brown lentils
  • 1 heaping tablespoon tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon ground cumin (optional)
  • ¼ teaspoon sea salt
  • 4-5 tablespoons ice cold water
  • 1-2 tablespoons fresh chopped parsley (optional)

Instructions

  1. Place the garlic clove in a food processor and pulse until broken down.
  2. Add the steamed lentils, tahini, olive oil, lemon juice, cumin, and sea salt into the food processor.
  3. Blend until well combined into a thick paste.
  4. Slowly blend in water until achieving a light, creamy consistency.
  5. Taste and adjust flavors as needed.
  6. Transfer to a serving bowl and optionally top with extra cumin, fresh parsley, and a drizzle of olive oil.
