Ingredients

The hummus

  • 2 tablespoons fresh lemon juice
  • 1 cup well-stirred tahini
  • 1-1½ teaspoons kosher salt
  • ¾ cup ice water
  • cups cooked chickpeas or one 15-oz can chickpeas, drained and rinsed
  • to taste none flaky sea salt

Optional garnish

  • 3 tablespoons olive oil
  • ½ cup cooked chickpeas, dried very well
  • ¾ teaspoon spices such as cayenne, smoked paprika, or cumin

Instructions

  1. Blend lemon juice, tahini, and salt in a food processor until it resembles peanut butter.
  2. Stream in ice water while blending until the mixture is smooth and creamy.
  3. Add chickpeas and blend until fully incorporated and smooth.
  4. Taste and adjust seasoning with more salt or lemon if desired.
  5. For crispy chickpeas, heat olive oil in a skillet, add chickpeas, and cook until golden, then season with spices.
