Red Lentil Hummus

Ingredients

The hummus

  • 1 cup red lentils, soaked, cooked, rinsed
  • ¾ tsp Himalayan sea salt
  • ¼ cup tahini
  • 2 cloves garlic, chopped
  • 3 tbsp olive oil
  • ¼ cup lemon juice
  • a dash red wine vinegar
  • a handful fresh cilantro

Optional garnish

  • a drizzle tbsp olive oil
  • a dash paprika
  • fresh cilantro for garnish

Instructions

  1. Soak the lentils overnight in water.
  2. Rinse the lentils in the morning and transfer them to a medium-sized saucepan.
  3. Cover the lentils with water, lightly salt, and bring to a boil.
  4. Simmer the lentils for around 20 minutes or until tender, then strain and let cool.
  5. Combine all ingredients for the hummus in a food processor and blend until well combined, about 1 minute.
  6. Transfer the hummus into a bowl and top with optional garnishes before serving.
