Whole30 Breakfast Casserole

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 large yellow onion
  • 1 pound ground turkey or ground pork
  • 1 ½ teaspoons kosher salt
  • 1 teaspoon dried sage
  • 1 teaspoon Italian seasoning
  • ½ teaspoon ground black pepper
  • ¼ teaspoon crushed red pepper flakes
  • 10 ounces frozen spinach
  • 3 cloves garlic
  • 10 large eggs
  • ½ cup unsweetened almond milk
  • 10 ounces frozen hash browns
  • 4 medium green onions

Instructions

  1. Preheat the oven to 350°F and prepare a 9x13-inch baking dish with nonstick spray.
  2. Sauté the onion in a skillet until softened, then add the ground turkey and spices, cooking until browned.
  3. Incorporate the spinach, garlic, and half of the green onions into the skillet and cook briefly.
  4. In a bowl, beat the eggs and almond milk together.
  5. Layer the hash browns in the baking dish, sprinkle with salt, then add the sausage mixture, and pour the egg mixture on top.
  6. Cover with foil and bake for 20 minutes, then uncover and bake for an additional 15 to 20 minutes until golden and set.
  7. Let cool slightly before serving.
