Eye of Round Roast Beef

Instructions
- Allow the roast to come to room temperature for 2-3 hours.
- Preheat the oven to 450°F.
- Pat the roast dry and coat with olive oil, then rub the spices all over the meat.
- Add optional rosemary and thyme to the pan.
- Place the roast fat cap-side up in a cast iron skillet or roasting pan.
- Bake for 15 minutes to form a crust on the exterior.
- Reduce the oven temperature to 325°F and continue cooking until desired doneness is reached.
- Remove the roast when it reaches the desired internal temperature.
- Let the roast rest for at least 20 minutes before slicing.
