Easy Top Round Roast Beef

Ingredients

The roast

  • 3-4 pound top round roast

The seasoning

  • 2 tablespoon extra virgin olive oil
  • 1 tablespoon garlic, finely minced
  • 1 tablespoon fresh thyme leaves, finely chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon kosher salt
  • 2 teaspoon cracked black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dry mustard

Instructions

  1. Preheat the oven to 450°F and set the oven rack in the center.
  2. Fit a wire rack in a roasting pan and set aside.
  3. Pat the roast dry with paper towels and rub olive oil over the surface.
  4. Mix the seasonings together in a bowl and rub them on the roast.
  5. Let the roast sit for 20-30 minutes to come to room temperature.
  6. Place the roast on the rack in the roasting pan and roast uncovered for 15 minutes.
  7. Reduce the heat to 325°F and cook for another 45-60 minutes until the internal temperature reaches 125-130°F.
  8. Remove the roast from the oven and tent it with aluminum foil.
  9. Let it rest for 10-15 minutes before slicing.
  10. While resting, add water to the pan drippings and heat on the stove, scraping the browned bits.
  11. Strain the au jus and keep warm until serving.
  12. Slice the roast and serve with au jus, mashed potatoes, and green beans.
