Easy Top Round Roast Beef

Instructions
- Preheat the oven to 450°F and set the oven rack in the center.
- Fit a wire rack in a roasting pan and set aside.
- Pat the roast dry with paper towels and rub olive oil over the surface.
- Mix the seasonings together in a bowl and rub them on the roast.
- Let the roast sit for 20-30 minutes to come to room temperature.
- Place the roast on the rack in the roasting pan and roast uncovered for 15 minutes.
- Reduce the heat to 325°F and cook for another 45-60 minutes until the internal temperature reaches 125-130°F.
- Remove the roast from the oven and tent it with aluminum foil.
- Let it rest for 10-15 minutes before slicing.
- While resting, add water to the pan drippings and heat on the stove, scraping the browned bits.
- Strain the au jus and keep warm until serving.
- Slice the roast and serve with au jus, mashed potatoes, and green beans.
