Instructions
- Preheat the oven to 260°C (500°F).
- Pat the meat dry and tie it with kitchen twine.
- Mix the butter and spices in a bowl until creamy, then spread it over the meat.
- Place the roast in a roasting pan and cook for 10 minutes.
- Turn off the oven for 10 minutes, leaving the door open.
- Turn the oven back on to 200°C (400°F) and cook for 55 minutes or until the internal temperature reaches 135°F.
- Let the roast rest for 15 minutes before slicing and serving.
