Ingredients

Chicken and Marinade

  • 3 tablespoons lemon juice
  • 3 cloves garlic

  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon turmeric
  • 4 pieces boneless skinless chicken thighs

Yogurt Dressing

  • 5 to 6 ounces plain, unsweetened yogurt
  • 1 teaspoon lemon juice
  • 1 clove garlic
  • 1 to 3 teaspoons milk
  • teaspoon salt
  • to taste pepper

Vegetables

  • ¼ cup chicken broth or water
  • 1 small red onion
  • 1 head romaine
  • 1 cucumber peeled and chopped
  • 1 large tomato

Instructions

  1. Whisk together marinade ingredients and coat chicken thighs, then marinate for 30 minutes to 2 hours.
  2. Mix yogurt dressing ingredients and adjust consistency with milk and seasoning to taste.
  3. Cook chicken in a skillet until fully cooked, then keep warm.
  4. Deglaze the pan with broth or water, then cook the onions until softened.
  5. Slice the chicken and assemble the salad with all ingredients, topping with dressing.
