Ingredients

The vegetables

  • 2 pieces zucchini (cut into coins)
  • ½ pound asparagus
  • ½ pound cherry tomatoes
  • 1 pound baby potatoes (halved)
  • 1 small red onion (cut into large wedges)

The chicken

  • 4 pieces chicken breasts (boneless, skin on)

The seasonings

  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • to taste pepper
  • 2 tbsp olive oil (extra virgin)

Instructions

  1. Preheat the oven to 425 degrees.
  2. Toss all the ingredients with olive oil and seasonings.
  3. Place everything on a baking sheet.
  4. Roast for 30 minutes.
