Cheesy Chicken, Kale and Sweet Potato Skillet Meal

Instructions
- Heat olive oil in a large nonstick skillet over medium heat until shimmering.
- Season chicken with salt and pepper, add to skillet in a single layer, and cook for 1-2 minutes without moving.
- Flip chicken and cook until no longer pink, about another 1-2 minutes. Remove chicken and set aside.
- If skillet is dry, add a drizzle of olive oil. Add shallot, red pepper, and garlic, cooking for 5 minutes until softened.
- Stir in sweet potatoes, red pepper flakes (if using), and chicken broth. Bring to a gentle simmer and cover, cooking for 8-10 minutes until sweet potatoes are tender.
- Return chicken to skillet along with kale, stirring until kale is bright green and wilted.
- Season to taste with salt and pepper, then sprinkle cheese on top and cover until melted or broil until golden.
