Ingredients

  • cups strawberries, stems removed and cut into quarters

  • 1 teaspoon maple syrup
  • cup full fat coconut milk, frozen into ice cubes
  • 1 cup unsweetened non-dairy milk
  • ¼ teaspoon vanilla extract
  • pinch sea salt

Instructions

  1. 1. Preheat the oven to 400°F.
  2. 2. Toss the strawberries with olive oil and maple syrup on a small baking sheet.
  3. 3. Roast the strawberries for 20 minutes until soft, juicy, and lightly caramelized, then let them cool slightly.
  4. 4. In a blender, combine the cooled strawberries, coconut milk ice cubes, non-dairy milk, vanilla, and sea salt.
  5. 5. Blend on high until smooth and serve immediately.
