Scalloped Potatoes

russet potatoes, peeled and sliced about ¼-inch thick

cheddar cheese or parmesan, grated to sprinkle on top
Instructions
- Preheat the oven to 350℉ (177℃).
- Cook the bacon in a large skillet until crisp, then remove and set aside.
- Leave two tablespoons of bacon drippings in the skillet, add butter, onions, garlic, and thyme, and sauté until fragrant.
- Pour in the cream and milk, add salt, pepper, and nutmeg, and simmer for about 5 minutes.
- Remove from heat and let the mixture cool slightly.
- Transfer the cream mixture to a Dutch oven, add the sliced potatoes, cover, and simmer for 10-15 minutes until almost tender.
- Transfer to a baking dish, sprinkle with cheese, and bake until bubbly and golden brown.
- Sprinkle with bacon and let cool slightly before serving.
