Scalloped Potatoes

Ingredients

  • 2-3 strips bacon, diced (optional)
  • ½ medium onion, chopped
  • 2 tablespoons butter
  • 1 teaspoon minced garlic
  • 1 sprig thyme (1 teaspoon fresh thyme)
  • cups milk
  • cups heavy cream or whipping cream
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • ¼-½ teaspoon ground nutmeg (optional)
  • 2 pounds russet potatoes, peeled and sliced about ¼-inch thick
  • 4 ounces cheddar cheese or parmesan, grated to sprinkle on top

Instructions

  1. Preheat the oven to 350℉ (177℃).
  2. Cook the bacon in a large skillet until crisp, then remove and set aside.
  3. Leave two tablespoons of bacon drippings in the skillet, add butter, onions, garlic, and thyme, and sauté until fragrant.
  4. Pour in the cream and milk, add salt, pepper, and nutmeg, and simmer for about 5 minutes.
  5. Remove from heat and let the mixture cool slightly.
  6. Transfer the cream mixture to a Dutch oven, add the sliced potatoes, cover, and simmer for 10-15 minutes until almost tender.
  7. Transfer to a baking dish, sprinkle with cheese, and bake until bubbly and golden brown.
  8. Sprinkle with bacon and let cool slightly before serving.
