Ingredients

  • 1 cup Buttermilk
  • 2 tbsp Hot sauce
  • 2 cups Whole wheat panko bread crumbs
  • 2 tbsp Crushed red pepper flakes
  • zest of 1 Lemon
  • Olive oil cooking spray
  • Salt

Instructions

  1. Preheat the oven to 400 degrees.
  2. Mix buttermilk and hot sauce, then soak the chicken tenders in this mixture for 15-20 minutes.
  3. In a shallow dish, combine bread crumbs, lemon zest, crushed red pepper flakes, and a generous amount of salt.
  4. Place a wire rack over a baking sheet and spray it with cooking spray.
  5. Dredge the chicken tenders in the bread crumb mixture and place them on the baking sheet.
  6. Spray the tops of the chicken tenders with cooking spray.
  7. Bake for 10 minutes, then flip the tenders and bake for another 10 minutes.
  8. For extra crispiness, broil for the last 2 minutes.
