Instructions
- Preheat the oven to 400°F.
- Make the flax egg by mixing ground flaxseed with water and let it sit for 5 minutes.
- Whisk together soy milk and apple cider vinegar and let it sit for 10 minutes.
- In a medium bowl, combine the dry ingredients: flour, cornmeal, sugar, baking powder, baking soda, and salt.
- Add the wet ingredients: soy milk mixture, flax egg, and melted butter to the dry ingredients. Stir until just combined.
- Pour the batter into a lightly oiled 8x8 baking dish or a preheated 9x9 cast iron skillet.
- Bake for 25-30 minutes until golden and a knife inserted comes out clean.
- Let cool for 10 minutes before slicing.
