Ingredients

  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • 1 cup soy milk
  • 1 tablespoon apple cider vinegar
  • 1 cup all-purpose flour
  • 1 cup medium coarse cornmeal
  • cup organic white sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup melted vegan butter

Instructions

  1. Preheat the oven to 400°F.
  2. Make the flax egg by mixing ground flaxseed with water and let it sit for 5 minutes.
  3. Whisk together soy milk and apple cider vinegar and let it sit for 10 minutes.
  4. In a medium bowl, combine the dry ingredients: flour, cornmeal, sugar, baking powder, baking soda, and salt.
  5. Add the wet ingredients: soy milk mixture, flax egg, and melted butter to the dry ingredients. Stir until just combined.
  6. Pour the batter into a lightly oiled 8x8 baking dish or a preheated 9x9 cast iron skillet.
  7. Bake for 25-30 minutes until golden and a knife inserted comes out clean.
  8. Let cool for 10 minutes before slicing.
