Ingredients

Wet Ingredients

  • 1 1/4 cups vegan milk
  • 2 teaspoons apple cider vinegar
  • 1 vegan egg substitute Bob’s Red Mill or flax egg
  • 1/4 cup vegan butter, melted
  • 3 tablespoons maple syrup

Dry Ingredients

  • 1 1/4 cups fine-grain cornmeal
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 3/4 teaspoon sea salt
  • 3 tablespoons cane sugar

Instructions

  1. Preheat the oven to 400°F (200°C) and grease an 8x8 square baking pan.
  2. Mix the vegan milk and apple cider vinegar and let sit for at least 3 minutes.
  3. In a large bowl, combine all the dry ingredients and set aside.
  4. In the same container as the milk mixture, add the wet ingredients and mix until combined.
  5. Pour the wet ingredients into the dry ingredients and mix until smooth.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 23-25 minutes until a toothpick comes out clean.
  8. Let cool for at least 10 minutes, slice, and serve.
