Instructions
- Husk the corn and cut each ear in half, then carefully cut the kernels from the cobs.
- In a large bowl, combine the raw corn, torn lettuce, blanched green beans, sliced red onion, chopped herbs, and toasted pepitas.
- To make the avocado dressing, sprinkle salt on the garlic clove, chop it into a paste, and mix it with yogurt, lemon juice, and avocado in a medium bowl.
- Puree the dressing with a hand blender and adjust the salt to taste.
- Toss the salad ingredients with the avocado dressing and serve.
