Ingredients

The noodles

  • 20 ounces butternut squash, peeled

The seasoning

  • 2 teaspoons olive oil
  • ¼ teaspoon kosher salt
  • to taste black pepper

Instructions

  1. Preheat the oven to 400°F and lightly spray two large baking sheets with oil.
  2. Trim the top portion of the butternut squash and peel the skin off.
  3. Cut the butternut squash into two pieces for easier handling, then spiralize using the thickest noodle setting.
  4. Cut the spiralized noodles into 6-inch lengths for easier eating.
  5. Transfer the noodles to the prepared baking sheets and drizzle with olive oil, salt, and black pepper.
  6. Roast the noodles in the oven until soft, about 7 to 10 minutes.
