Instructions
- Preheat the oven to 400°F and lightly spray two large baking sheets with oil.
- Trim the top portion of the butternut squash and peel the skin off.
- Cut the butternut squash into two pieces for easier handling, then spiralize using the thickest noodle setting.
- Cut the spiralized noodles into 6-inch lengths for easier eating.
- Transfer the noodles to the prepared baking sheets and drizzle with olive oil, salt, and black pepper.
- Roast the noodles in the oven until soft, about 7 to 10 minutes.
