Truffle Mac and Cheese

Ingredients

The Pasta

  • 16 cups water
  • 1 tablespoon kosher salt
  • 1 pound uncooked elbow pasta

The Cheese Sauce

  • 3 cups shredded fresh white cheddar
  • 3 cups shredded fresh smoked gouda
  • ½ cup unsalted butter
  • ½ cup all-purpose flour
  • 2 cups half-and-half
  • 2 cups whole milk
  • 1 ½ teaspoons salt
  • ½ teaspoon fresh cracked black pepper
  • 1 teaspoon truffle oil

Instructions

  1. Boil water in a large pot and add salt.
  2. Cook pasta until al dente, then drain and set aside.
  3. Melt butter in a saucepan and whisk in flour to make a roux.
  4. Gradually add half-and-half, whisking until smooth, then add whole milk.
  5. Simmer the mixture until thickened, then remove from heat.
  6. Stir in salt, pepper, and truffle oil, then mix in half of the cheese until melted.
  7. Combine pasta with cheese sauce and serve, or transfer to a baking dish.
  8. If baking, top with remaining cheese and bake for 15 minutes until bubbly.
