Truffle Mac and Cheese

The Cheese Sauce

shredded fresh white cheddar

shredded fresh smoked gouda

unsalted butter

truffle oil
Instructions
- Boil water in a large pot and add salt.
- Cook pasta until al dente, then drain and set aside.
- Melt butter in a saucepan and whisk in flour to make a roux.
- Gradually add half-and-half, whisking until smooth, then add whole milk.
- Simmer the mixture until thickened, then remove from heat.
- Stir in salt, pepper, and truffle oil, then mix in half of the cheese until melted.
- Combine pasta with cheese sauce and serve, or transfer to a baking dish.
- If baking, top with remaining cheese and bake for 15 minutes until bubbly.
