Instructions
- Preheat the oven to 425°F.
- In a small bowl, whisk together sugar, pumpkin pie spice, and salt.
- In a large bowl, whisk the eggs and pumpkin until combined, then add the sugar-spice mixture.
- Gradually stir in the evaporated milk and bourbon until well combined.
- Pour the mixture into the unbaked pie shell.
- Bake for 15 minutes, then reduce the temperature to 350°F and bake for an additional 40 to 50 minutes until a toothpick comes out clean.
- Cool on a wire rack for 2 hours, then refrigerate until ready to serve.
- For the bourbon whipped cream, beat all ingredients together until soft peaks form.
