Melt In Your Mouth Roast Beef

Instructions
- Remove the roast from the refrigerator about 2 hours before cooking to bring it closer to room temperature.
- Combine salt and pepper in a small bowl.
- Make 3 slits in one side of the roast, stuff with garlic and some salt and pepper, then repeat on the other side.
- Rub remaining salt and pepper over the outside of the roast.
- Preheat the oven to 275ºF.
- Melt butter in an oven-safe skillet and sear all sides of the roast for about 15 minutes.
- Remove the roast and deglaze the pan with broth and wine.
- Return the roast to the pan and add onion slices and rosemary around it.
- Roast in the oven until the internal temperature reaches 115ºF, about 12-15 minutes per pound.
- Transfer the roast to a cutting board, tent with foil, and let it rest for about 20 minutes.
- Mix arrowroot powder or cornstarch with pan juices to make gravy and serve with the roast.
