Instructions
- Preheat the oven to 400ºF.
- Combine the spices and olive oil in a small bowl.
- Peel and cube the sweet potatoes into ¾-inch pieces.
- Pour the spice mixture over the sweet potatoes and stir to coat.
- Spread the sweet potatoes in a single layer on a baking sheet.
- Roast for 15 minutes, stir, then roast for another 15 minutes until tender.
- Taste and adjust salt if necessary, then sprinkle chopped cilantro on top before serving.
