Ingredients

The soup base

  • 2 tablespoons olive oil
  • 2 medium carrots, peeled and chopped
  • 2 stalks celery, chopped
  • 1 medium onion, peeled and chopped
  • 2 cloves garlic, minced
  • 8 cups chicken bone broth
  • 1 leaf bay leaf
  • a few sprigs fresh thyme
  • to taste salt and pepper

The protein and vegetables

  • 2 boneless, skinless chicken breasts
  • 2 medium potatoes, peeled and cubed
  • 1 tablespoon chopped fresh parsley (optional, for topping)

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add chopped onions, carrots, and celery, cooking until softened.
  3. Stir in minced garlic and cook until fragrant.
  4. Pour in the chicken broth and add bay leaf and thyme, bringing to a simmer.
  5. Submerge chicken breasts in the broth and cook until fully cooked through.
  6. Remove chicken, shred it, and return to the pot.
  7. Add cubed potatoes, season with salt and pepper, and simmer until potatoes are tender.
  8. Remove bay leaf and thyme, stir in parsley, and serve hot.
