Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add chopped onions, carrots, and celery, cooking until softened.
- Stir in minced garlic and cook until fragrant.
- Pour in the chicken broth and add bay leaf and thyme, bringing to a simmer.
- Submerge chicken breasts in the broth and cook until fully cooked through.
- Remove chicken, shred it, and return to the pot.
- Add cubed potatoes, season with salt and pepper, and simmer until potatoes are tender.
- Remove bay leaf and thyme, stir in parsley, and serve hot.
