Summer Tomatoes, Corn, Crab and Avocado Salad

Ingredients

  • 12 oz lump crab meat
  • 1 pint grape tomatoes, cut in half
  • 1 unit hass avocado, diced
  • 2 unit hot peppers such as serrano or jalapeños, diced fine
  • cups roasted corn kernels
  • cup chopped red onion
  • 2 unit limes, juice of
  • 1 tsp olive oil
  • 2 tbsp chopped cilantro
  • to taste salt and fresh pepper

Instructions

  1. Combine red onion, lime juice, olive oil, salt, and pepper in a small bowl and let marinate for at least 5 minutes.
  2. In a large bowl, mix together crab meat, avocado, tomatoes, hot pepper, and corn.
  3. Add the marinated onion mixture and cilantro to the large bowl and gently toss everything together.
  4. Adjust lime juice, salt, and pepper to taste before serving.
