Ingredients

  • 3 cups raw corn
  • 1 diced red bell pepper
  • ½ small red onion
  • 1 cup quartered cherry tomatoes
  • cups chopped avocado
  • cup chopped cilantro
  • ¼ cup fresh squeezed lime juice

Instructions

  1. Slice the corn kernels off the cob and place them in a large bowl.
  2. Add the diced red bell pepper, red onion, quartered cherry tomatoes, chopped avocado, chopped cilantro, and lime juice to the bowl.
  3. Season with salt and pepper to taste.
  4. Gently toss all the ingredients together until well mixed.
  5. Serve and enjoy!
