Ingredients

The salad

  • 6 cups kale, torn and washed
  • cup pumpkin seeds/pepitas
  • ½ each avocado, cubed
  • 1 each carrot, in ribbons
  • ¼ cup shredded purple cabbage
  • ¼ cup hulled hemp seeds
  • 1 tablespoon black or white sesame seeds (optional)

Tahini dressing

  • 2 tablespoons tahini
  • ¼ teaspoon sea salt
  • ½ tablespoon sesame oil
  • ½ tablespoon tamari or liquid aminos or low sodium soy sauce
  • 2 tablespoons water
  • 2 tablespoons lime juice
  • 1 clove garlic, minced

Instructions

  1. Massage and tear the kale leaves in a large strainer for about 2 minutes, then wash and dry them.
  2. Prepare the tahini dressing by whisking together all dressing ingredients in a medium bowl until smooth.
  3. Top the kale with avocado, carrot ribbons, and seeds.
  4. Drizzle the tahini dressing over the salad and toss everything to combine.
  5. Serve and enjoy!
