Thai Curry Grilled Chicken

Instructions
- In a bowl, whisk together ginger, garlic, lime juice, red curry paste, and coconut milk.
- Place chicken breasts in a ziplock bag and pour the marinade over them. Seal and refrigerate overnight.
- Preheat the grill to medium-high heat (375-400°F).
- Prepare the grill grates with cooking spray or an olive oil-soaked rag.
- Grill the chicken breasts for 5-7 minutes on each side until fully cooked.
- Garnish with chopped cilantro and serve.
