Ingredients

The chicken and marinade

  • 4 pieces boneless skinless chicken breast
  • 1 tablespoon minced fresh ginger
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lime juice
  • 3 tablespoons red curry paste
  • 13.5 oz. coconut milk

Optional garnish

  • to taste chopped cilantro

Instructions

  1. In a bowl, whisk together ginger, garlic, lime juice, red curry paste, and coconut milk.
  2. Place chicken breasts in a ziplock bag and pour the marinade over them. Seal and refrigerate overnight.
  3. Preheat the grill to medium-high heat (375-400°F).
  4. Prepare the grill grates with cooking spray or an olive oil-soaked rag.
  5. Grill the chicken breasts for 5-7 minutes on each side until fully cooked.
  6. Garnish with chopped cilantro and serve.
